1 T olive oil
1 cup couscous cooked according to directions. Vegetable broth works well.
2 T parsley
1 T rosemary
1 t thyme
1 apple, diced, or 1/2 cup dried apples
1/2 cup dried cranberries
DRESSING
1/8 cup apple cider vinegar
2 T maple syrup
1/2 T salt and pepper
1/8 cup olive oil
Cook couscous in broth. Let cool and mix in other ingredients. Whisk vinaigrette and taste to make sure it's not too sweet or sour. Mix with couscous.
