Use only good summer tomatoes for this.
4 big tomatoes, coursely chopped
1/2 c. onion, chopped
1/2 c. pimento stuffed olives, chopped
DRESSING
Whisk together:
1/2 c. olive oil
1/4 c. wine vinegar
3 cloves garlic, minced
2 T fresh basil, chopped
1/2 t. thyme
Salt and pepper
