Wholesome goodness.
1 cup cooked wild rice
1/2 c. cranberries, chopped and sprinkled with sugar. If using dried cranberries, omit sugar.
1/4 c. pecans, toasted if you like
1/4 c. apricots, dried
1/2 c. celery, chopped
1/4 c. onion, minced
DRESSING
2 T olive oil
Couple splashes of cranberry juice and balsamic vinegar
Little salt and pepper
